PEI Potato Chili

2small carrots, chopped 2
2 cupstomato juice500ml
1/2 tspdried basil2ml
1green or red pepper, chopped1
1medium onion, chopped1
3PEI potatoes, diced3
2garlic cloves, crushed2
1 tspdried oregano5ml
1 cupdried green or brown lentils250ml
19oz canchickpeas540ml
14 oz cankidney beans398ml
19 oz canchopped tomatoes540ml
2 tbspchili powder25ml
1celery stalk, chopped1
2 cupsvegetable stock500ml
1/8 tsppepper0.5ml
1/2 cupplain low fat yogurt, optional125ml

Wash lentils. Drain and rinse chickpeas. Combine all ingredients, except yogurt, in a heavy saucepan, cover and bring to a boil, reduce heat and simmer about 30 minutes, stirring occasionally, until lentils are tender. Dish into serving bowls and garnish with a dollop of yogurt, if desired.
