Heather's Roasted Lemon Potatoes

2 cups1/2 carton of Campbell's chicken soup broth500 ml
3 cups4 large Potatoes peeled & cubed750 ml
1/2 cup2 fresh Lemons (squeezed)125 ml
2tbspDried Italian oregano 30 ml
2 tbsp1 clove fresh garlic30 ml
2 tbspGrated sea salt and pepper 30 ml




Directions
Preheat oven to 350F

Wash and cut potatoes in quarters.
In a medium sized casserole dish combine all of the ingredients Roast covered for approximately one hour, until potatoes are tender.

Enjoy!! Serves 2-4.
