4Potatoes (medium)4
1 tspExtra virgin olive oil5 ml
1 tbspButter15 ml
to tasteSalt and pepperto taste




Directions
Peel and and cut potato(s) into bite size chunks then boil to a point where a fork will easily pierce.

Then place chunks in a buttered frying pan at medium heat. Add salt and pepper, diced onions and 1 teaspoon of extra virgin olive oil. Fry until golden brown, stirring frequently.

Serve with bacon and eggs. Yum.
