Farm Style Potato Swirl

4 stalksGreen Onion (sliced)4 stalks
dashBlack Pepperdash
2 tbspParmesan Cheese30 ml
3/4 cupHot Milk180 ml
dashNutmegdash
2 tbspButter30 ml
2Garlic Cloves 2
4-5Large Potatoes4-5
2Egg Yolks2
1 1/2Smoked Sausage1 1/2
1/2 cupMozzarella Cheese125 ml
3 tbspParsley, chopped45 ml
1 tspDried Thyme5 ml




Directions
Cut potatoes into cubes. Place in a large saucepan and cover with water. Add a dash of salt.

Bring to a boil, cover and simmer for 20 minutes or until potatoes are tender. Drain

Mash potatoes. Add green onion and garlic, mix to blend.

Add butter, hot milk, egg yolks, pepper and nutmeg. Whip until light and fluffy. Add parsley.

Add Mozzarella cheese, sausage, thinly sliced and Parmesan cheese.

Spoon mixture into a buttered ovenproof dish. Sprinkle with herbs. Arrange some sausage slices on top.

Heat under broiler until lightly browned and hot, 5 to 7 minutes.
