Potato and Cheese Casserole

1Garlic Clove, minced or pressed1
3/4 tspSalt4 ml
4 ouncesCream Cheese, softened and cut into cubes113 g
1/4 tspPepper1 ml
2 tbspButter or Margarine30 ml
1/2 cupGreen Onion, thinly sliced125 ml
2 lbsBaking Potatoes1000 g
1/2 cupHalf and Half125 ml
1 cupBrie or Camembert cheese, remove rind and dice into 1/2 inch pieces250 ml




Directions
Cook potatoes in boiling, salted water for 15 minutes or until tender.

Drain well.

Meanwhile, saute garlic and green onion in butter for 2 minutes or until softened.

Mash potatoes. Beat in garlic butter mixture, cream cheese, half-and-half, salt and pepper.

Fold in Brie or Camembert cheese.

Place in 1 1/2 quart casserole dish.

Bake at 450 degree oven for 15 minutes or until top begins to lightly brown.
Garnish with thyme or parsley.

Serve at once.
