PEI Baked Potato with Vegetable Topping

1/4 cupsliced green onion50ml
4Russet PEI potatoes, baked4
1/2 cupcoarsely chopped red pepper125ml
1/2 cupthinly sliced carrots125ml
3 cupsdiced eggplant750ml
1/2 cupsnow peas 125ml
2 tbspbutter25ml
1/2 tspcrushed chilies 2ml
1/2 tspsalt2ml
2 tbspapple juice or white wine25ml
1/2 tspsugar2ml
2 tspfinely chopped ginger root10ml
1 cupbroccoli florets250ml




Directions
In a 8 cup (2L) casserole, microwave broccoli, eggplant, carrots, green onion, ginger and red pepper for 6-8 minutes at HIGH. Add remaining ingredients. Microwave 2 minutes at HIGH. Stir.

Cut a deep cross in the top of each potato; squeeze lightly to open. Spoon vegetables
over top.
