Egg and Potato Casserole

1 cupGrated cheese250 mL
pinchSalt and Pepperpinch
4 TbspButter80 mL
2 TbspButter40 mL
4 TbspFlour80 mL
6Hard boiled eggs, sliced6
pinchPaprikapinch
4 cupsCooked cubed potatoes1000 mL
2 cupsMilk500 mL
1/2 cupCracker crumbs125 mL




Directions
Mix first 4 Tbsp butter, salt, pepper. paprika, potatoes and eggs. Melt 4 Tbsp of butter blend in flour, add milk and cook and stir until sauce thickens. Season to taste. Put alternate layers of potatoes, eggs, and sauce in a buttered dish. sprinkle with buttered cracker crumbs and grated cheese.

Bake in 350F oven for 15 minutes. Serves 6-8.

USE W.P. GRIFFIN POTATOES FOR BEST RESULTS THEY ARE THE BEST POTATO ON THE MARKET I WOULDN'T EAT ANOTHER POTATO.
