Hodge Podge Fusion

2 tblspcurry paste25ml
1 cup1 inch pieces, green beans250ml
2/3 cupcream, 18%160ml
1 cup1 inch pieces, yellow beans250ml
2/3 cupcoconut milk160ml
2 cupscubed red potatoes500ml
2 cupscarrots, chopped500ml
1 cup1 inch pieces, purple beans250ml
1 cupchopped onions250ml




Directions
Saute onions and set aside. Cook each vegetable until still firm in the least amount of water you can get away with. Cook potatoes on their own. Cook carrots on their own. Cook all the beans together. Drain vegetables. In a large pot add cream, coconut milk and curry paste. Blend well. Cook on simmer until all veggies are fork tender. Enjoy!
