Seafood Stuffed Twice Baked Potato - <font color=D61602>2nd Place Winner 2011</font>

1/3 cupsmall salad shrimp80ml
1 cupmonterey jack cheese (or your choice)250ml
1/3 cuplobster80ml
10 fresh chives chopped10
4 4 good sized baking potatoes4
2 tbspbutter25ml
1/4 cupwhipping cream50ml
to tastesalt pepperto taste
1/3 cupsnow crab80ml
2 clovesgarlic chopped and sauted2 cloves




Directions
Bake potatoes until cooked. Let cool and cut top off the potato. Scoop out flesh with spoon being careful not to break the skin (hint-crisscross cut first before scooping-it comes out easy without breaking the skin) Place in bowl. Saute butter and garlic. use a pastry brush and rub on the inside of the potato skin. Use the rest of the butter to add to the the bowl of potato. Add cream and mash well.

chop lobster and crab add to bowl of potatoes. Add shrimp and 1/2 of the cheese. Fold mixture together to blend. Scoop portions back into the potato shell. Season with pepper and salt to taste. Sprinkle with left over cheese and bake in oven 375 f for 20 min. Garnish with chopped chives.
