Appetizers/Snacks
INGREDIENTS
| 1 cup | sour cream | &nsbp; | | 2 stalks | green onion | 2 stalks | | 6 | potatoes(medium size) | 6 | | 2 Tbsp | olive oil | 25ml | | 6 slices | bacon, crisp and crumbled | 6 slices | | 2 Tbsp | cajun spice | 25ml | | 2 cups | grated cheddar cheese | 500ml |

DIRECTIONS
Wash, scrub and dry potatoes. Including the skins, cut all of the potatoes thick as if you are peeling them. Place potatoes in plastic bag add olive oil, cajun spice. Shake until potatoes are well coated. Place on a cooking sheet. Bake at 350 for 50 minutes. While baking, chop green onion, cook bacon and crumble, grate cheese. Remove potatoes from oven top with onion, bacon and cheese. Return to oven for another 5 - 6 minutes. Serve with sour cream.
