Baby Red & White Kabobs

Baby Red & White Kabobs

INGREDIENTS
2 tbspButter (optional)30 ml
1/4 CupExtra Virgin Olive Oil 63 ml
3 lbsDole small white &/or red potatoes1.36 Kg
To tastePepperTo taste
2 tspOregano8 ml
1/8 CupJuice of 1/2 lemon32 ml
To tasteSaltTo taste
5Cloves of Garlic5
2 tspThyme8 ml
2 tspBasil8 ml

DIRECTIONS
* If using bamboo skewers, place in water to soak for ~30 minutes

Cut small potatoes in half.

Pierce holes in each potato half with fork and place in a bowl or large re-sealable bag.

Add olive oil, lemon juice, garlic, oregano, thyme and basil. Stir, seal and let it marinate in the fridge for ~20 minutes.

Remove marinaded potatoes, skewer on the flat side in a row.

Oven method:
Bake at 375F for 30-40 minutes until potatoes are cooked through.
Brush with butter (optional)

Grill method:
Oil the grill grate and place the skewers on the grill, letting it cook for 20-30 minutes, until cooked through. (Watch for flare-ups)
