Potato Cake

4 tbspFlour2 oz
2 tbspButter or Margarine1 oz
1/2 poundPotato8 oz
1/2 tspSalt2 ml

Potato Cakes are best made while the potatoes are hot.
1) Wash, peel and cook your potatoes.
2) Put potatoes through a potato ricer.
3) Add salt and melted butter, then work in enough flour to make a pliable paste.
4) Roll into a circular shape about 1/4 thick.
5) Cut into 6-8 farls (circle cut into quarters (triangle shapes)) and cook on a medium heat until well browned on both sides.

Alternatively potato cake may be cut into large rounds with a plain cutter.
